A 10 minute Peach Cobbler

Dinner party at a friend's home, running back from work, and I was able to prep for this in about 10 minutes, and baked it at her place as we were eating dinner. Turned out fabulous.

Prep:

-Peel and thinly slice 6 peaches, add 1/4 cup suger, and a teaspoon of cornstarch. I skipped lemon juice, but can also add that. Transferred it to a baking tray with a lid, ready to carry.
-In a yoghurt container, I prepped the dry: 1 cup flour, 1/2 cup sugar, 1 tsp baking powder, 1/2 tsp salt.
- Carried a stick of butter (only need 3/4 stick). Remember to refrigerate it.

At the friend's house:

- Bake the peaches for about 10 minutes at 425 (I did it at 350, since I didn't read the recipe).
- In the mean time, break apart cold butter with a fork, and rub it into the dry ingredients
- Here's the odd part, but I won't doubt it now. Add quarter cup of boiling water to the dry, barely mix and put blobs of the batter on the peaches.
- Bake for another 25 mins (It took me longer, because I was initially baking at 350).

Serve with Vanilla icecream.
